Cold Hold (41 F/45F) "Turkey and roast beef at 45 degrees in the prep cooler top portion. It is important to keep potentially hazardous food at the proper temperatures to prevent possible food borne illnesses. The portions were stacked above the line causing the problem. These items were out less than 4 hours, removed and placed in the prep cooler."
Water Supply - Approved Source/Sufficient Capacity/Hot and Cold Under Pressure The hot water supply to the faucets is only reading 107. degrees. Hot water must be provided to faucets at a minimum of 110 degrees at all times. The electronic adjustment was set at 120 degrees so there is an issue somewhere. Have it checked out to provide the proper temperature water.
