Cross-contamination of Raw/cooked foods/Other "Store raw ground beef items below whole beef and seafood items to prevent cross contamination. Observed boxes of ground beef inside the walk in cooler stored above lexans of whole steaks and beef patties in the line drawer cooler stored above seafood. Observed that all the raw ground beef items were moved to the lower shelves and stored below seafood and whole beef items - violations corrected on site. Also, keep ready to eat (rte) foods protected from cross contamination, and observed a tray of raw chicken in the line drawer cooler stored behind cooked sausage. The raw chicken was moved to the front of the line drawer cooler and in front of rte foods to prevent cross contamination-violation corrected on site. Also, the person in charge was provide a food hierarchy storage chart for reference on safe food storage."
Toxic Items Properly Labeled/Stored/Used "Use sanitizer agents (quaternary ammonia) at a concentration (150-400 ppm) not to reach toxic strength to prevent chemical contamination. Observed a spray bottle and sanitizer pail of quaternary ammonia on a kitchen shelf at a concentration above 400 ppm. Direction was provided to change the sanitizer solutions to 150-400 ppm. Also, provide labels on chemical containers to prevent chemical contamination, and observed an unlabeled spray bottle of chemical agent at the bar. The spray bottle of unknown chemical agent was emptied and violation corrected on site. "
Thermometers Provided/Accurate/Properly Calibrated (2C) Provide thermometers in refrigerated units where perishable foods are held to monitor the air temperature of equipment used for cold storage of perishable foods. Observed 2 line preparation coolers without thermometers and both coolers were stocked with thermometers-violation corrected on site.
Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized "Maintain food contact surfaces clean and sanitized to prevent contamination. Observed the interior of the ice maker machine ceiling and ice chute with slime and mold residuals, and hotel pans nested on a kitchen wire rack with food residuals. The interior of the ice maker machine and pans were cleaned and violation corrected on site. "
