Cold Hold (41 F/45F) Observed that the prep cooler and large reach in cooler were not holding the proper temperature the prep cooler was holding a temp of 50 degrees F and the large reach in cooler was holding a temp of 55 plus degrees .Cold hold temperature is 41 degrees F or below. COS
Food Contact Surfaces of Equipment and Utensils Cleaned/Sanitized/Good Repair Large cutting board located on the prep table contained a large number of deep cuts which held food build up. Food contact surface should be clean and free of build up. Also food contact surface should be in good/ sound condition. COS
