      Signage shall be posted at each hand sink used by employees to remind them to wash hands.
    • Back flow/back siphonage protection (Backflow prevention, no direct connection sewage system & drains from food equipment (culinary sink, ice machines) 5-402.11, p 157)
      Food preparation sink and 3-compartment sink and (wok)- A direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed.

      Wall by handsink (by 3-compartment sink) has a large hole- can see into the hall way- and shall be repaired.
