All food in dry storage room shall be stored off the floor.
- Warewashing
- Adequate warewashing facilities (Drainboards provided for soiled and cleaned items 4-301.13, p 118)
- Plumbing/Water/Sewage
- Handwashing facilities (Handwashing signs not posted 6-301.14, pg 173)
Signage shall be posted at each hand sink used by employees to remind them to wash hands.
- Back flow/back siphonage protection (Backflow prevention, no direct connection sewage system & drains from food equipment (culinary sink, ice machines) 5-402.11, p 157)
Food preparation sink and 3-compartment sink and (wok)- A direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed.
- Facility/Equipment Requirements
- Thermometers provided/accurate (Thermometers: provided & accessible 4-302.12(A), pg 120)
Thermometers shall be placed inside each cooler to mnitor cold holding temperatures- maintain temp of below 41*.
- Walls, floors, ceiling, lighting (Floors, walls, ceilings installed, are not easily cleanable 6-201.11, p 166)
Wall by handsink (by 3-compartment sink) has a large hole- can see into the hall way- and shall be repaired.
