Observation: Mens bathroom did not have a hand washing sign posted. Must post a hand washing sign at all hand sinks used by food service employees.
- Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
Observation: Two containers of frozen sausage were found in the walk in cooler with expired date marks. Containers were pulled from frozen and never re-dated. When removing a TCS (time/temp control for safety) food item from the freezer the item must be re-dated to show new use by date.
- Storage and maintenance of wet and dry wiping cloths
Observation: Observed a wet wiping cloth not stored in sanitizer. When not in immediate use all wet wiping cloths must be maintained in sanitizer to prevent buildup of bacteria.
- Non-food contact surfaces and food contact surfaces of cooking equipment and pans are clean
Observation: Retail cup and lid dispensers have become soiled and must be cleaned.
- Heating, ventilating, and air conditioning systems design, installation, and cleaning
Observation: Return air vent covers (by kitchen walk in's) have dust buildup and must be cleaned.
- Equipment location, installation, repair, and adjustment
Observation: The retail walk in freezer has a condensation problem that allows water to buildup and drip down the front area of the cooler. Also water has penetrated the stainless steel wall where the main door is. Water has frozen and expanded to split the wood studs behind the wall. Both issues must be resolved to prevent injury, accident, or unsanitary conditions.

Observation: Ice chute on the retail pop machine has become soiled and must be cleaned and sanitized.

Observation: Slight flour build-up on dough mixer. Clean as often as necessary to prevent build-up.

Observation: 1) wipe out spilled food debris in drawers under doughnut preparation table. 2) Clean white plastic shelving unit under 3 compartment sink. 3) Clean out spilled pop syrup in cupboards under slushy machine. 4) Sweep floor in walk-in freezer. Clean all non-contact surfaces as often as necessary
- Food storage containers identified with common name of food
Observation: No label on working container storing white powder under dough press. Label all working containers with common name of food item for easy identification.
