    Observation: Raw chicken stored next to watermelon in walk -in cooler, relocated at time of inspection.

    Observation: Overhead lighting in storage areas are missing light shields.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation: Cream cheese in crock at 58 degrees, disposed of. Will place crocks in freezer over night.
  • Foods are cooled using appropriate methods
    Observation: Eggs and bacon, left over from breakfast are placed on a paper plate, covered with plastic wrap and placed in small reach-in cooler for customer self service while still hot (94 degrees). Removed at time of inspection. Will properly cool food before packaging and and storing.

    Observation: Dried beef gravy on buffet at 125 degrees, removed and discarded at time of inspection.
  • Discarding ready to eat, PHF/TCS food prepared on-site or opened commercial container held at 41°F for 7 days
    Observation: Working package of deli meat with expiration date of 7/20/14 in walk-in cooler, discarded at time of inspection.
