Inadequate monitoring of SOP’s addressing bare hand contact employee observed cutting bacon with bare hands. Employees may not contact exposed, ready to eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single use gloves or dispensing equipment. The following handwashing sinks do not have signs posted when employees must wash their hands, in the ktichen, bar area and both restrooms. All handwashing sinks shall have signs posted when employees must wash their hands. Given during this inspection.

The handwashing sink at the bar area was not accessible. All handwashing sinks shall be accesible at all times. Shall designate one sink of the four compartment sinks for handwashing.

Mop water dumped outside per the owner. The service sink had a sign posted which stated, "PLEASE DO NOT EMPTY MOP BUCKET IN THIS SINK DUMP OUTSIDE ITS NASTY." The owner was educated and this sign was removed and the utiltily sink will be used to obtain and dump mop water.

1) The ice scoop is laying on top of the ice maker. 2) The clean dishes are stored on towels. Shall have the scoop and the clean dishes on a cleanable nonabsorbent surface. The ice scoop can be stored in the ice bin with the handle upward or use a ice scoop holder. The clean dishes suggest using bar mat and remove the towels. 3) The employee restroom has various food utensils stored in the restroom. Remove all kitchen utensils from this employee restroom.

Still need test kits for checking concentration of sanitizer. Bleach sanitizer in sanitizing bucket in kitchen was at correct concentration and ammonia sanitizer at bar three tank sink was also at correct concentration when checked during inspection. Owner reports that Eco-Lab is scheduled to install a pre-measured sanitizing system at warewashing sink tomorrow. Will get test kits from distributor at that time.
