The area behind fryers, under rotiserie hood, pipes and area around can rack are still in need in need of cleaning.

Additional cleaning is needed on floors is some areas. Replace broken or missing floor tile and mop borad tile. (The owner has stated this is scheduled for completion on Monday 27 Feb.)

- Cold hold (PHF food not maintained at 41° F or below 3-501.16, pg 82)
Roast beef panned for use on serving line is being held at room temp 69Deg F. Potentially hazardous food sahll be held at 41 deg F or below or 140 deg F or above. Salad serving bar is not operating there is potentially hazardous product in this unit (cooked eggs), the addition of ice to this unit may have been adequate however it is not at a depth to contact the product.

The personnel present did not seem to grasp the need to provde routine frequent cleaning of all areas in this facility.

Potentially hasardous ready to eat foods shall be dated as to prep/pull date. Items that are frozen shall have the dates of prep, when frozen and when thawed to track the seven day shalf life .

Provide covering for food items when stored.

Floor sink under dish mchine is obstruced and dish washing liquid is running over the floor to a floor drain. This drain must be operable.

Therometers were not found in all refrigerated units.
