  • Labeling
    Finished product labels for Gluten Free Oatmeal Raisin cookies had the following deficiencies: 1) The ingredients statement includes the use of baking powder and brown sugar, which are made of multiple sub-ingredients which are not declared on the finished goods ingredient statement, 2) The ingredient statement includes "organic butter"
  • Materials and workmanship
    The materials of equipment does not allow proper cleaning. Specifically, I observed the use of tape to repair covers for ingredient storage bins used to store cane sugar and all purpose flour. The use of tape does not permit the container lid to be adequately cleaned. Photographs of the container lids were taken.
  • Maintenance of equip., utensils, and finished food packaging
    Failure to maintain equipment in an acceptable condition through appropriate cleaning and sanitizing. Specifically, I observed a build-up of dust on the fan guard unit in the walk-in cooler. Additionally, I observed dried food residue adhering to surfaces on the floor mixer, which are located directly above the mixing bowl area. The food residue was discolored and hard, which would indicate that the surfaces with dried residue collecting on them had not been cleaned at a sufficient frequency. Photographs of the walk-in cooler fan guard and floor mixer were taken.
