    Observation:There are no handwashing signs in bathrooms, printed, corrected on site.

    Observation:Observed bowls of food stored directly on top of uncovered food in containers in the prep cooler. Observed ice cream scoops stored in room temperature water at ice cream station.
  • PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control
    Observation:Observed salad dressings, cheese, lettuce and cut melons stored on top of ice at the salad bar - containers were placed deeper into the ice so that the ice would surround the containers, corrected on site.
  • PHF/TCS food maintained at 135°F or above, except during preparation, cooking, cooling, or when time us used as a public health control
    Observation:Observed several foods on buffet steam tables at 119 to 125 degrees - water was added to the steam tables and was not hot when food was placed into the water bath. Foods were reheated and temperature was increased, corrected on site.

    Observation:Observed boxes of food on walk-in cooler and freezer floors.

    Observation:Observed home-canned peach jam in salad bar refrigerator, discarded, corrected on site.

    Observation:Observed box of raw fish and bags of raw breaded tenderloins stored on walk-in cooler shelves above vegetables - reorganized shelves, corrected on site.

    Observation:Observed cooked meat in re-used cardboard lid - discarded, corrected on site.

    Machine had not yet been used today. The machine was run through 4 cycles and the sanitizer was primed to remove air bubbles from the line. Corrected.
