Observation:Cookies prepared and packaged on the premises are not labeled with ingredients.
- A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods
Observation:There is no instant-read digital food thermometer with thin-diameter probe to monitor temperatures of thin foods.
- Manual warewashing sinks requirements
Observation:There are only two sinks in the establishment, however, there are more than 2 utensils/equipment requiring cleaning and sanitizing. They currently do batchwashing, however, staff are not sanitizing utensils and equipment.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Observation:Observed eggs stored over milk in walk-in cooler, corrected on site.
- Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
Observation:Employee stated that utensils and equipment are only washed and rinsed - there is no sanitizing step.
