- Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing.
Observation: kitchen make table was missing a thermometer-corrected
- Heating, ventilating, and air conditioning systems design, installation, and cleaning
Observation: ceiling vents need cleaning
- Compliance with submitted HACCP plans and approved variance procedures
Observation: There are several occasions when the F'real shake machine exceeded 24 hours for the approved variance cleaning and there were 3 days in a row nothing is recorded (no cleaning?).
- Ventilation hood system and filters designed to be cleanable, prevent dripping, and are adequate to prevent grease or condensation from collecting on walls and ceilings
Observation: the kitchen ventilation is inadequate to remove cooking odors and smoke from the facility
- Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
Observation: all back storage rooms floors are in need of cleaning today. F'real shake machine should be wiped down more often, there are a lot of splashes on visible parts.
