Observation: Observed soiled air circulation fans in the kitchen that need cleaning, in addition to hard to reach areas of the kitchen walls and flooring, especially under and behind equipment.
- Food storage containers identified with common name of food
Observation:Identify all food working containers with the common name of contents: such as flour, sugar, butter, oil, etc.
- Bare hand contact with ready to eat foods
Observation:Some bare hand contact while preparing sandwiches. Corrected while onsite, but long term practices must include a barrier between hands and ready to eat foods.
- Miscellaneous sources of contamination
Observation:Ensure that prep containers, utensils, etc., are properly washed and sanitized between any contact from raw animal foods (or their containers) and foods that are ready to eat.
- Separating raw animal foods from raw ready to eat food and separating raw animal food from cooked ready to eat foods
Observation:A bucket of raw chicken stored above lettuce and tomatoes in refrigerator. Corrected onsite.
