    Observation: Dishmachine is not sanitizing. Repair person coming to fix within the week.

  • Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness
    Observation: Sanitizer was not hooked up to machine at time of inspection on. Hose had been pulled out of container. Machine was unable to be primed. Using mechanical sanitizer until repair can be made. Call made at time of inspection.
  • Variance obtained for specialized processing methods
    Observation: No time stamp on tempering cheese. Temperature of cheese was 50 degrees at time of inspection. It was decided cheese could be used through end of busy service time.
  • Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
    Observation: Cleaning needed in grease reclaim area. Also need cleaning under and around drink station and by drive through.
  • Food is properly identified and monitored
    Observation: Lettuce, cheese, tomatoes and items on make line did not have proper time as control identification. Marked at time of inspection.

    Observed live roach in control panel of frappe machine. Inside of control panel could not be accessed. Observed debris and food behind frappe equipment along SE wall of drink staion providing harborage for pests. Observed white powder in crevices - no record available that indicates this is approved for use in food establishments.
  • Physical facilities maintained clean: Cleaning frequency, restrictions, and methods
    Observed food debris/harborage for pests behind drink equipment on SE wall. Cleaning frequency is not adequate to prevent buildup.
  • Premises maintained free of insects, rodents, and other pests
    The presence of insects rodents, and other pests are controlled as required
