    Observation: Two ice scoop handles were observed to be in contact with ice used for drinks.

    Observation: Documented clean-up procedure is not available.

    Observation: Debris is present under the front drink service area.

    Observation:Sliced tomatoes found to be approximately 63F, shredded cheese found to be approximately 54F (Time as health control procedure not being used at the time of inspection).
  • Cleaning frequency of food contact surfaces (PHF/TCS)
    Observation:Swiss cheese on the make counter was present for an unknown amount of time. Surface was not cleaned/sanitized prior to placing new Swiss cheese on the same area.
  • When to wash
    Observation:Employee removed gloves following handling raw beef patties and did not wash hands prior to donning new gloves.
  • Food is properly identified and monitored
    Observation:Procedure for using time as a health control is not being followed after new cold holding unit was installed. Swiss cheese is being handled under the same manner as the existing variance for the American cheese.

    Observed two mops sitting in mop buckets from previous nights use - there is currently not a designated location to hang wet mops.
  • Date marking for ready to eat, PHF/TCS food prepared on-site or opened commercial container held for more than 24 hours
    Containers of cheese, onions, lettuce in the small prep cooler and walk-in cooler were not all dated
