Observation:Sliced tomatoes found to be approximately 63F, shredded cheese found to be approximately 54F (Time as health control procedure not being used at the time of inspection).
- Cleaning frequency of food contact surfaces (PHF/TCS)
Observation:Swiss cheese on the make counter was present for an unknown amount of time. Surface was not cleaned/sanitized prior to placing new Swiss cheese on the same area.
- When to wash
Observation:Employee removed gloves following handling raw beef patties and did not wash hands prior to donning new gloves.
- Food is properly identified and monitored
Observation:Procedure for using time as a health control is not being followed after new cold holding unit was installed. Swiss cheese is being handled under the same manner as the existing variance for the American cheese.
