Observation: Sliced tomatoes with a temperature of 44* sitting on ice cubes. More ice was added around the tomatoes to keep the tomatoes on the top as cold as the ones below.

Shredded chicken holding at 45* in a container with ice packs. Ice packs were on the bottom of the container with nothing touching the sides of the food to keep it cool. Chicken was moved to a reach in cooler.
