Observation: Several salsa-Bloody Marry in plastic bottle are not labeled or date marked in a bar's small cooler. All food items taken from original packages shall be identified with the common name of the food. Corrected on site.

Observation: The following foods in the cooler were not date marked: cooked corn, salsa-tomato , and meat. Owner sated that food is for his personal BD party tonight. Must date mark all TCS (time/temp control for safety) food with date opened/prepared. Marked and corrected on site.

Observation: The most recent inspection was posted but not visible for consumers to view. Fall dawn of the floor. Move the license in a conspicuous place for consumers to view. The last inspection report is not posted visible. Must post the inspection report at eye level for consumers to view. Corrected on site.

Observation: The following food contact surfaces were not clean to sight or touch 1) The microwave had a small amount of food debris build up. 2) The upright homestyle refrigerator in the drawer. BOTH WERE CORRECTED ON SITE. SHALL CLEAN AS OFTEN AS NECESSARY TO KEEP CLEAN.
- Demonstration of Knowledge
Observation: 1)Employee observed having meat thaw in the sink and not able to verbalize how to thaw food.2) Employee stated bleach sanitizer concentration was suppose to be 40 ppm.EMPLOYEE EDUCATED AND VERBALIZED UNDERSTANDING. BOTH OF THE ABOVE WERE CORRECTED ON SITE.

Observation: A container of oil was not labeled. ALL food items taken from original packaging shall be identified with the common name of the food. CORRECTED ON SITE.
- Outer openings are protected
Observation: The back door entrance door closure is broken. The owner stated on is on order. ALL outer openings shall be provided with self closing tight fitting doors. When the door closure is available shall install.
- Frozen PHF/TCS foods are properly slacked and thawed
Observation: In the 3 compartment sink in the wash and rinse side had frozen meat improperly thawing. Educated the staff and the employee verbalized understanding. The frozen meat was placed back into the freezer. GIVEN A HANDOUT HOW TO THAW FOOD SAFELY. CORRECTED ON SITE.

Observation: Date marking is EXCELLENT but two types of meat(HAM ROAST BEEF) products have exceeded the 7 days. The employee discarded at this time. ALWAYS DISCARD POTENTIALLY HAZARDOUS FOOD ITEMS IF NOT USED WITHIN 7 DAYS. GOOD JOB ON THE DATE MARKING.

Observation: The handwashing sink at the front counter does not have a sign posted when food employees must wash their hands.A sign or poster that notifies FOOD EMPLOYEES to wash their hands shall be provided at all HANDWASHING SINKS used by FOOD EMPLOYEES and shall be clearly visible to FOOD EMPLOYEES. GIVEN DURING THIS INSPECTION TO POST. CORRECTED ON SITE.
- Miscellaneous sources of contamination
Observation: The tongs for the hot dogs were placed on a dirty paper plate. The tongs shall always be stored on a cleanable, washable and nonabsorbent surface IE: a tray or other type of equipment that can be washed, rinsed, and sanitized. The paper plate was thrown away. Today is a golf tournament and hot dogs will not be placed in the hot dog warmer. The employee was educated and verbalized understanding. The employee SHALL WASH, RINSE, AND SANITIZE PRIOR TO USING THE TONGS.

1) Ice machine has slight growth on sides. Must drain, wash, rinse, and sanitize to prevent contamination more frequently. 2) Two boxes of Ziploc bags were stored on the floor in kitchen. Single service & use items must be stored 6" off the floor.
