Crab was temped at 50 degrees. According to employee, crab was removed from cooler at restaurant at 10:30 am and all food is discarded after lunch service at 1 pm. Crap container on ice during lunch. Must have a way to transport cold hold items so they remain cold during transport and maintaining temperature during service.
- Hot hold (PHF food not maintained at 135°F or above 3-501.16(1), p 82)
Chicken was at 100 degrees. Must be maintained at 135 degrees or hotter. According to employee, chicken is discarded after lunch and is out of temp for less than 4 hours.

Employees were observed engaging in activities that contaminate the hands then handling food without first washing hands. In addition, employees were observed changing gloves without first washing hands. Hands must be washed prior to glove usage and after engaging in activities that contaminate hands.

Open beverage container in food preparation area. Employee beverages must be from closed containers to prevent mouth to hand contamination.

Employee was observed handling food with no hair restraint. Employees must wear effective hair restraint such as hair net, cap, or visor.

Open containers of flour and liquid to coat tenderloins were observed. Containers should have cover to prevent contamination when not in use.

The stopper for the third compartment of the three compartment sink does not work. Dishes cannot be effectively washed, rinsed, and sanitized. Must replace stopper.

The floor drain by ice machine must be cleaned.

Floor tiles in dining room, serving area, and employee restroom have missing floor tiles. Tiles must be replaced to provide a smooth non-absorbent cleanable surface.

The mop was observed drying in the bottom of the mop bucket. The mop must be hung to allow to properly air dry to prevent breeding germs.
