4-601.11 Clean bottom of RI cooler. Accumulation of residue on the bottom of the RI coolers. 4-602.13 Clean non food contact surfaces as often as necessary to prevent accumulation of residue. Accumulation of black residue on the gasket of the RI milk display cooler and RI coolers.
5-205.15 Repair condensate leak in RI freezer. Condensation leak inside of the RI freezer.
6-501.12 Clean facilities (floors, walls, ceilings, fixtures, etc.) as often as necessary to maintain cleanliness. Accumulation of residue behind, near, and underneath equipment.

At the time of the inspection the children that were enrolled at Camp Hope at the New Hope Christian School had gone on a field trip. Therefore, Fisher only cooked for the Pres-school and Daycay facilities. He prepared beenie weenies and chicken nuggets. Lunch was not being served athe the school facility.

JCDH 2.2 Provide readily available documentation of food safety training for all employees at all hours of operation. Floater did not have foodhandlers card available. I will check to see if Teresa Lee has a valid card.
3-501.16 Maintain potentially hazardous food at 135 F or above. Corn dogs 119째F and french fries 113째F. Corn dogs and french fries were reheated to 170째F. 3-501.16(A)(1) Maintain PHF at 135 or above. PHF < 135F in hot holding unit due to faulty equipment (exception roasts at < 130F). Cease use of faulty equipment until repaired and verified by JCDH. Plug on steam table has an electric short.
4-601.11 Clean bottom of RI cooler. Accumulation of residue on the bottom of the RI coolers. Defrost and clean shelves and bottoms of refrigerator and freezer. Accumulation of residue on the bottom of the RI chest freezer.

Accumulation of grime and residue behind and underneath equipment and shelving. 6-501.14 Clean restroom exhaust vent cover. Accumulation of dust and grime on the exhaust vent cover in the employee rest room.
