3-501.16 Maintain potentially hazardous food at 41 F or below. Internal temperature of bologna, hot dogs, & deli ham 42 to 54 stored in the open face display cooler. Food out of temperature was transfered to to the Walk-In to cool back down to 41F or below.
Based on the information received from the Butcher (Desi), the shipment was delivered around noon and placed on a pallet (at room temperature) before stocking into the open face display case.
4-202.16 Provide smooth, easily cleanable non food contact surfaces. Plastic curtain located at the entrance to the WI cooler is torn.
4-903.11 Store single service articles at least 6 inches above the floor. Food trays stored on the floor in the meat market & the storage room.
