    Observation: Various sliced meats and cut vegetables in walk in cooler is note date marked. Staff discarded items of unsure date and confirmed date of sliced ham when processed, ordered staff to label each with correct date.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
  • Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
    Observation: The dishwasher sanitizer is not being used according to EPA registered label use instructions and is at 0 PPM. Ordered to use 3 compartment sink to use for sanitizer after dishwashing in machine. Staff called in for repair. Will re-inspect 4/1/16. Re-inspected on 4/1/16, dishwasher sanitizer re-test and is at 50ppm chlorine.
    Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.

    Observation: Cut vegetables, soups, slice ham in the walk in cooler were observed to be unwrapped or uncovered.
    Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.
