- KDA_3_50116A2 - --At the pizza station, meatballs 46F had a measured temperature of above 41F. PIC said the meatballs had been let in the MT overnight. The ambient temperature was 38.3F. COS Meatballs were discarded.
- KDA_4_20211A2 - --Stored as clean on a clean storage rack in the warewashing area, were cracked plastic containers and lids. COS PIC discarded the container and lids.
- KDA_4_501112A1 - --The mechanical hot water sanitizing dishwashing machine had a measured temperatures of 157.4F and 156.2F. PIC said he will put in a order to get it repaired today. COS Advised PIC to use the 3 compartment sink until the dishwasher was repaired.
- KDA_4_60111A - --Stored as clean on a clean storage rack in the warewashing area, plastic food contact containers and lids had dried food debris on the interior surface. Stored as clean on the wall by the 3 compartment sink, was a large spoon, a meat tenderizer, and a stainless steel lid had dried food debris on the surface. COS Items were removed and placed in the warewashing area to be washed, rinsed, and sanitized. Under the seasoning shelf, under the prep table in the prep kitchen were plastic food contact containers that were stacked and had dried food debris on interior surface. - KDA_5_20515B - --When water is turned on at the handwashing sink by the pizza station, the pipes leaks on the floor. The handwashing sink in the warewashing area was not draining properly when water was turned on.
