KDA_3_30212 - --On a utensil rack there was a large plastic food grade container with a white granular substance. The person in charge said it was sugar. KDA_3_50116A2 - --In the cooler (built into the table) there was a plastic cold container of sliced swiss cheese at 53.1F and a metal container of cooked onions at 54.5F. The products were placed in the unit around 1-1:30pm and were tempted around 3:35pm (less than 4 hours). COS-placed in walk in cooler. In the make table (drive-thru side) there was a metal container of cooked onions at 50.9F and a metal container of individually wrapped chicken breasts at 50.7F. The products were placed in the unit around 11:30am and was tempted around 4:00pm (past 4 hours). The ambient air temperature of the unit was reading 47.8F in the make table and 36.0F by the vent (down in RIC). Half of the vent has ice built up and blocking the air flow. COS-discarded all potentially hazardous food from unit. KDA_4_20211A2 - --On a hook above the 3 compartment sink there were 3 rubber spatulas with deep cracks on the food contact surfaces (not easy to clean). COS-discarded. There was also one rubber spatula that had deep cracks on the edges (not easy to clean). COS-trimmed the edges smooth. KDA_4_204120 - --In the reach in cooler (drive-thru side) there is water pooling at the bottom of the unit. KDA_4_30111 - --The make table (drive-thru side) ambient air temperature is reading 47.8F towards the top and 36.0F by the vent down in the reach in cooler. Half of the vent has ice built up and blocking the air flow. KDA_4_60111C - --There is dust build up on the fan blowers in the walk in cooler. KDA_4_90311B - --On the utensil rack in the ware wash area there were 3 metal food grade containers and 3 plastic food grade containers stacked wet/clean and not able to properly air dry.
