  • R/*4.5/4.6 The French fry cutter was soiled. Food contact surfaces shall be washed, rinsed, and sanitized, and shall be clean to sight and touch.
  • *3.2 Observed two containers of raw bison were stacked in a container of cooked peppers. Different types of raw animal foods shall be stored separate from or not above ready-to-eat foods to prevent cross-contamination.
  • *3.4 Lobster Bisque was lacking date marking, Egg salad was dated 5/10/12, and Meatloaf was dated 5/9/12. Foods shall be dated the day of preparation and shall be used or discarded in seven calendar days.
  • *7.0 Observed a blue chemical spray bottle in the bar was not labeled. Toxic chemicals shall be properly labeled with the containers contents to avoid confusion and misuse. PIC was asked to label this bottle today.
  • *3.4 Observed the butter packets were stored at room temperature. Foods shall be stored at 41°F and below to limit the growth of organisms.
  • R/5.4 Relocate the dumpster and grease receptacle to a cleanable sloped to drain surface such as asphalt or concrete.
  • 5.4 Observed garbage and grease pooling on the ground surrounding the dumpster and the grease receptacle. Clean this area to prevent contamination of the surface/ground.
  • 4.4 Observed the following areas were in disrepair:
  • - Door seal on the upright bar cooler, and on the McCall freezer unit
  • - Excessive ice accumulation on the condenser of the McCall refrigeration unit, which is dripping on to covered food products.
  • Repair these areas to provide a cleanable surface. Discard any foods which might be contaminated from the leaky condenser.
  • Note: Discussed with PIC to separate damaged canned goods from normal stock.

  • *7.1 Observed the charcoal lighter fluid was stored with or above equipment. Toxic chemicals shall be stored in a separate designated area from food and equipment to prevent contamination.
  • *4.5/4.6 The bun warmer drawers, and the French fry cutter were soiled. Food contact surfaces shall be washed, rinsed, and sanitized and shall be clean to sight and touch.
  • 5.4 Relocate the dumpster and grease receptacle to a cleanable sloped to drain surface such as asphalt or concrete.
  • 5.1 Eliminate the air gap under the side delivery door, to prevent pest entry.
  • 4.4 Repair the rusty ice machine shield, and the shelves in the walk-in cooler, to provide a cleanable surface.
  • 4.1 Provide a thermometer in the walk-in cooler (currently holding 36°F) to assure 41°F and below is maintained.
  • 6.2 Provide a hand washing sign in the men's restroom, to promote proper hand washing practices.
  • Operation opens at 7am and serves breakfast.

  • R/*3.4 Observed raw burgers were holding at 43-44°F on the top of the reach-in. Maintain foods at 41°F and below to limit the growth of organisms.
  • *7.0 Label the cup, and bottle, both with the blue chemical liquid to avoid confusion and misuse.
  • *3.1/6.3 Observed a can of sweet corn was dented. Packages of food shall be in good condition to protect the integrity of the contents and to prevent potential contaminants. Relocate this can good to a separate and designated area.
  • *3.2 Raw burgers were stored behind condiments and pickles on the top of the reach-in unit. Relocate burgers closer to the cutting board to prevent contamination of other foods. Different types of raw animal foods shall be stored from each other and other raw or ready-to-eat foods to prevent cross-contamination.
  • *3.1 Corn contained a mold-like growth. Foods shall be safe, wholesome, and unadulterated. This food item was discarded.
  • 6.2 Repair the non functioning light fixture under the hood.
  • 4.4 Repair the damaged top seam on the freezer to provide a cleanable surface.
  • R/3.2 Label the squeeze bottles with the name of the food to avoid confusion and misuse.
