As a reminder, each batch of prepared sushi rice must be tested using a pH meter and the pH reading must be recorded in a log book. pH of sushi rice was recorded at 3.79 at the time of the inspection. Must correct all violations no later than March 21, 2014. Must send email to Corey DiLorenzo at crd05@health.state.ny.us addressing corrective actions taken to all cited violations no later than 3/21/14. |
