Cook stated that batter had been taken out of cooler 20 minutes ago. Batter was placed into walk-in cooler to bring down to <= 45 degrees. A bin of oil and butter mixture was found sitting out at room temperature since opening at 11:30am. Mixture was moved to the walk-in cooler to bring down temperature to <= 45 degrees. Corrected.
