09/30/2015 | Inspection | Comment only: Cooked powdered mashed potatoes located in hot holding unit in kitchen were temped using a metal stem probe thermometer at 106 degrees F. In discussion with staff, the potatoes were prepared earlier today and placed in the hot holding unit. The potatoes are made by adding butter and water to dehydrated potato pearls. Upon reading the packaging for the dehydrated potato pearls, I did not notice anything that states the product must be held above 140 degrees F after hydrating the potato pearls. To follow up. In the meantime, please monitor this hot holding to unit to ensure it is capable of hot holding foods at or above 140 degrees F at all times.
