12/10/2015InspectionThe dishwasher was working at the time of inspection, the upstairs room for catering did not have any food in it at the time of inspection(if you intend on using this area to store drinks and condiments it cannot have carpeted flooring and it must be constructed such that it meets 14-1). Thermometer (digital) was on site and calibration procedures were discussed. TPHC documentation for the hollandaise was reviewed at the time of inspection. A formal waiver will be issued and a new permit will be issued listing the waiver. Consumer advisory information was located on the menu. Additional guidance will be provided.

05/06/2014InspectionAll hot and cold holding temperatures, other than those noted as a violation, were acceptable. The dishwasher was working properly during the inspection. The 3 bay sink used to dump mop water was also being used to was dishes in the event that the dishwasher goes down. It is recommended that a separate 3 bay or mop sink be installed, to be used solely for that purpose. The menu was reviewed and cooling was discussed for numerous items. Please complete the cooling logs provided during the inspection, and have them available for the inspector upon the next inspection.
