09/09/2015 | Inspection | Comments only: 1. Using a metal stem probe thermometer, food temps ranged from 45 to 47 degrees F in three different refrigeration units (right side two door line cooler, small front waitstaff True cooler, and front desert display cooler). Francis moved all foods and beverages that require refrigeration and placed them into properly functioning coolers prior to the end of the inspection. Please do not place any food or beverage that requires refrigeration in these coolers until they are serviced and are capable of cold holding all items at or below 45 degrees F at all times. 2. An approximate 10lb cooked roast beef found in line cooler was temped at 41 degrees F using a metal stem probe thermometer. In discussion with Francis, the roast was cooked whole and then placed in cooler to cool. Provided education. Must cut all cooked meats into 6lb sections or less prior to cooling. 3. In discussion with Francis, bleach, water, and detergent soap are used to store wiping cloths. Provided education. Do not add soap to sanitizer.
All remaining violations must be corrected no later than 9/30/15. Must send Corey DiLorenzo an email to corey.dilorenzo@health.ny.gov addressing corrective actions taken to all cited violations no later than 9/30/15. |
