About 1 pound Gruyere cheese and about 2 quarters sliced cantaloupe at 64, out on counter in kitchen ~30 minutes per chef.

Raw steaks found in vacuum packaging in walk-in cooler. Foods were packed onsite, previously frozen. No approved plan in place for reduced oxygen packaging.
