02/19/2016InspectionFood temperatures measured with DOH thermocouple thermometer: black beans 43 degrees F., guacamole 43 degrees F., taco beef 42 degrees F., pork 41 degrees F., rice 43 degrees F. Proper food cooling methods were discussed with chef, and shallow pan cooling of rice was observed. As per mechanical dishwasher gauge, wash temperature of 149 degrees F. and final rinse temperature of 185 degrees F. were measured. Chef indicated he would have the dishwasher checked to ensure the machine is operating properly and to code.
