Improper cooling at room temperature will not allow product to cool from 120- 70 degrees in two hours and from 70-45 in additional four hours. (VOLUNTARILY) discarded. 5A - One flat of raw shell eggs stored on shelf near wok at 55 degrees for approximately one hour according to chef/owner ( all eggs placed back into preparation cooler for cold storage)
