11/23/2015 | Inspection | At the time of the inspection the following items were discussed with the store manager:
- When slice pizza is being displayed it must have a time attached to that pizza to track the food items as per the agreement with the Department for time as a critical control point.
- Discussed the cold holding issues noted above, it is highly recommended to use temperature logs at least two times daily to track each cold holdings function.
