Food items were warmer in center than on exterior and were about 5-6 inches in depth. Operator stated products were placed in containers with lid off to cool from previously cooked state this morning. Sanitarian observed questionable cooling methods, but did not have definitive evidence to require correction. Operator was advised to re-portion food items into shallow layers to facilitate rapid cooling, and complied. |
