Also, routine calibration of numerical thermometer used to check cooked potentially hazardous (TCS) foods and hand washing with kitchen staff during inspection. Checked UV water monitoring equipment during inspection- meter reading 93% with light operating. A Time Table of Compliance Date of January 9, 2016 has been established to correct the above-mentioned violations. A re-inspection will' be conducted after this date to determine compliance.

Discussed the following with manager- routine hand washing & proper use of plastic gloves to eliminate direct bare-hand contact with cooked & ready-to-eat foods. Also discussed ill food handler policy with manager during inspection. Checked UV disinfection equipment during inspection- Meter reading 72%.

Also discussed use of ice bath and cooling paddles. UV intensity reading of 79-83 observed. Indicator light blinking, indicating UV light needs to be changed.
