Caramelized onions in walk in cooler found at 51 degrees were cooked within an hour and half and were being properly cooled. All freezer temperature were within code. cheese 43 deg. , lettuce 43 deg., raw onions 43 deg. in walk in cooler. Hot holding units cooked eggs 157 deg., sausage 160 deg. |
