Blast chiller used to rapidly cool cooked items prior to being placed in cooler with a log monitoring temperatures hourly. Reviewed hot/cold packing and transporting processes with operator. All food temps are monitored and logged throughout packing and delivering hot and cold meals. Hand washing station, sanitizer solutions and thermometers were all excellent and being used. All staff are wearing gloves. Overall very well run facility. |
