02/08/2011 | Inspection | Bitherm thermometer is not accurate, found reading 49F at ambient room temperature (70F). Reviewed calibration with food operator. However, thermometer lacked a tool holder to secure adjustment of calibration for this stem thermometer. No back up available; allowed the use of unit to determine hot and cold hold food temps. Food serve worksheet temperatures were not recorded upon conclusion of this inspection. Reviewed sanitizer concentrations required for stationary food surfaces and manual wash procedure. No test strips available, sanitizer strength of solution made by staff was found to be less than required for use with food equipment. The sanitizer was tested to be below 150ppm. Generally QATS required twice this strength for use in sanitizing stationary food surfaces.
