 02/26/2016InspectionAdvised operator to apply for a time terperature variance for the pizzas. The main prep cold unit is down today, but they have arranged for repairs and it has been emptied. There was no way to tell if the light bulbs throughout the kitchen were shatter proof or not. The operator must provide proof that they are shatter proof, and if not they must be shielded. Operator has requested for a pizza variance.
