At 1:30 this inspector found a 5lb bag of chicken wings stored on shelf above grill. After speaking with the chef it was found that they were placed there to thaw. Using this inspectors calibrated food testing thermometer the chicken wings temped at 38 deg F. Chef placed wings into cooler and corrected.
