Dishmachine had no chlorine residual. Corrected by unclogging the tubing and the residual was adequate. Temps on serving line were all good: Creamy chicken 170F, Pork Veg 175F, Turkey gravy 160F, stuffing 158F, Lettuce 44F. Discussed ill foodworker policy. |
