No violation noted during this evaluation. | 02/20/2016 | Inspection | Operator was requested to contact inspector about the walk-in's and the bags of frozen meat sauce in the freezer. On 2/22/16 Paster Alan called the inspector to be informed of the need to submit plans for the partially constructed walk-in's. During the phone call the inspector interviewed the lady responsilble for cooling of meat sauce. She described a rapid procedure with the use of 2 inch deep metal pans in an ice bath. The person who monitored cooling and method used for the frozen bags of meat sauce were not determined. Maintenace man called for specific instructions for submitting plans . He was told to submit a layout drawing indicating dimensions; and specific's for surfaces, lighting,shelving, compressors, plumbing, and thermometers. The need for a smooth, sealed, durable, water resistant, and easily cleanable floors was explained. |
