Also reviewed practices with operator and again provided operator with these fact sheet copies. Revied the sliced tomatoes are considered potentially hazardous food and require proper refrigeration after slicing. These are the same 3 items reviewed initially on 5-20-08 food inspection with this operator.

Also reviewed the do's and dont's of proper cooling with operator and provided him with a copy of this proper practice fact sheet. Also reviewed that sliced tomatoes are considered as potentially hazardous food and need to be refrigerated 45F or below after this food item is sliced.
