5C- Pan of chicken salad and pan of tuna salad in bottom of sandwich bain marie at 55 F and 51 F respectively. According to staff, products were made less than two hours ago using prechilled ingredients, but sat at room temperature for awhile before placing in unit. Products placed in walk-in freezer to rapidly chill. |
