08/13/2009 | Inspection | 5a - The lunch being served was deli subs. The su7bs were made w/ turkey, ham, salami, lettuce and tomoatoes. The subs are assembled by kitchen staff then placed on the buffet serving line. Temps were taken of sliced meats and tomatoes on kithcen assembly line and temps ranged from 50-55DF. Items had reportedly been out of coller for ~30 minutes. DOH inspector recommended staff bring smaller quantities of these items out of cooler to ensure temps stay at or below 45 df.
Subs on buffet line were temped at 68-70DF. Heat lamps were on and ice was not beneath pans. These items were removed from line and placed in freeze for rapid chill. Items had been out 30-45 minutes. DOH inspector instructed FS amanger on importance of keeping cold food at or < 45 DF. Ice was placed on buffet line. Left over sandwiches were to be discarded - Corrected.
