Moist wiping cloths observed lying on the counter and not stored in sanitizing solution.

Mashed potatoes were held at 124 degrees F rather than 135 degrees F or above as required. Potatoes were in hot hold unit for 3 hours. product was reheated to >165*F and placed back on steamer. steamer was unplugged.

Food on the salad bar was held at 55 degrees F rather than 41 degrees F or below as required. All cut vegetables and salads were disposed of during this inspection.

Cutting boards on the prep table observed with deep scratches and scoring not allowing for effective cleaning and sanitizing.
