    Terry type towels used as a substitute for hand washing. Observed soiled common cloth terry type towel hanging from the apron strings of one of two employees conducting food preparation in the kitchen. Corrected on the spot by the inspector.

    Observed individually portioned fruit cups being stored uncovered inside the reach-in refrigerator. Compliance required in 1 hour.

    Observed potentially hazardous food that was cooked, cooled and reheated on premises for hot holding not reheated so that all parts of the food reach a temperature 165 degrees F as required. Employee stated soup was reheated wihtin the last 20 minutes, but soup was found with internal temperature of 129 degrees F. Soup reheated to proper temperature.

    Observed pastries individually wrapped for customer self service not properly labeled with Name and address of the buisness along with a list of ingredients in decending order greatest to least as required. Compliance required in 2 weeks.

    Observed dried, hardended, food debris on the cutting blade of the manual french fry-vegetable cutter. Immediate corrective action is required.
