    The food facility operator shall be the Person in Charge or shall designate a Person in Charge and shall ensure that a Person in Charge is present at the food facility during all hours of operation. -Food safety certification expired. Employee states he is in the process of taking the certification class.
  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    Milk, deli meat food was held at 51 degrees F rather than 41 degrees F or below as required. Employee states lunch was served and unit was left open. Sanitarian explained to employee that temperature control is very important especially for potentially hazardous food. Management instructed to initiate immediate corrective action.
  • Controlling Pests, Removing Dead or Trapped Birds, Insects, Rodents and Pests (46.981(k)(l))
    Visible physical evidence of rodent activity observed in the kitchen area. Sanitarian observed mouse feces along floor perimeters in kitchen.
