Commercially processed soup was not heated to 145 °F before being placed in the steam table as required. Observed cream soup at 118*F in the hot holding unit. Corrected on site.

Food facility is using an approved non-public water system, but does not have current laboratory testing results for water potability. Reviewed the Pa Dept of Enviromental Protection notice of violation report dated Sept 1 , 2011. Fax email or mail a current water analysis to the PDA Region 3 Office Po Box C Tunkhannock Pa 18657 by the correct by date. Supplied the PIC with email , fax number and mailing address.
Availability, Capacity & Pressure of Water (46.805)
Food facility hot water heater is not producing enough hot water to supply the ware washing sinks at the time of this inspection. Hot water was observed at a maximum of 97*F rather than the required 110*F. Reference the Subway manual for manual ware washing temperatures and sanitizing temperatures.

Food facility operator failed to post an original, valid Food Employee Certification in a location conspicuous to the consumer. A photo copy of Nicola Smith's PDA FEC is available. Nicola Smith's original Food Employee Certificate was available. PDA FEC # 54329 expires 5/21/14.
