The City of Philadelphia Food Safety Certificate is expired and there were no other City of Philadelphia Certified individuals present during the inspection.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Various foods were held at 46-50 degrees F rather than 41 degrees F or below as required in te Continental refrigerator and the walkin box.
- Equipment in Good Repair & Proper Adjustment (46.671)
Floor drain cover by automatic dishwasher is cracked and corroded and in need of replacement.
- Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Management has been instructed that manual sanitization must ensue until a detectable concentration of sanitizer is present.
- Lighting Intensity (46.943)
A burnt out bulb was observed in the exhaust hood. Bulb was replaced during inspection.

-Walls are in need of repair throughout the kitchen, including coving tiles. -Floor is in need of cleaning along walls. -A missing ceiling tile was observed in the dry storage area.

Fruit flies observed throughout the kitchen (in small numbers). Management is aware of the problem. Pest control services visit the facility weekly.

Raw chicken was stored above raw beef, pork, fish in the walk-in freezer and uncovered foods observed in the walk-in freezer.

Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food.

The quarternary ammonia concentration in the sanitizing solution of the three-basin warewash sink was 0 ppm, rather than 200 ppm as stated on the manufacturer's use directions. Also, chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required.
